I had a ton of people request recipes on the survey, and while I’m hesitant to share here (I’m no food stylist!), I would like to occasionally post our weeknight meals. This one everyone likes. And it’s healthy! For the boys, I usually add some fruit to their plates, and cheese or yogurt too. As I’ve mentioned before, tuck will eat nearly all veggies, while wes is offended by most of them. But this is one way he eats vegetables … without knowing it.

So I do have an Inspiralizer but Publix just came out with spiralized veggie noodles, and so I cheated. I bought two packages of butternut squash noodles freshly spiralized. I use Savory Lotus’ recipe, for the noodles, which makes delicious almost real noodle like “pasta”. For the sauce I saute olive oil with garlic, a half of an onion, and a chopped up carrot. Then put the ground turkey (or you could use ground beef or chicken) in to saute together until all is brown and chopped up. If I have time I’ll make actual tomato sauce, but last night I did not have time or tomatoes. So I poured roasted garlic tomato sauce from trader joe’s. My all time fave, if not homeade, is Dave’s Gourmet organic garlic & basil sauce. Oh and their butternut squash sauce is amazing as well. But Dave’s is pricey, though low in sodium which I love. Plus I think you can definitely get away with store bought sauce with a little olive oil, onions, and garlic simmering before you pour it in. Once it’s all finished… noodles, sauce, cheese on top! For the side we had squash, onions, and zucchini – roasted with salt and olive oil.
So one meal we all enjoy, and there’s not much short order cooking (just some cheese and fruit to cut for kid size). Let me know if you try it!
