These are just easy chicken breasts – coated in olive oil, garlic rub, and topped with fresh rosemary. I use tin foil for quick clean up, and no pans to wash. Oven at 400 for 22-26 minutes.
so for the boys I cut up the chicken, give them ranch to dip it in, and have mac n cheese with butternut squash. I add oven baked little pieces of butternut squash to their boxed annies mac n cheese, and also a teeeny bit of cream chese. and apples. always apples.

I just started using this a couple weeks ago, after my sister and brother in law had said they enjoyed it. I love not having to think about dinner twice a week. Plus I love that it gets me out of my rut, and it teaches me how to make basic things. I tried Blue Apron before and it seemed a little harder. There’s still some prep involved, but I find it to be pretty minimal. For this taco night, I have the actual soft tacos intended, I put JB’s over spinach (he’s trying to cut carbs), and I made the boys a quesadilla with the ingredients.
This was a meatloaf burger night from Hello Fresh. For adults we had salad with it, but for the boys I roasted green beans, added whole milk mozzarella balls (they love those!) and apples. Honestly I would never make meatloaf on my own, but it is a satisfying meal. So this is where Hello Fresh helps me out.
As for what we’re up to…
We went out to The Waterline (new AMI resort!) for my friend Kelly’s Painting With A Fish kids event. The boys loved it and loved their fish painting. The resort is beautiful, and people are always asking me where they should stay out there. This is a great option for families since they are all suites. I had dinner at their restaurant for Shannon’s birthday and it was delicious! We shared everything tapas style, so got to taste a lot. If you want a bigger option, this is the airbnb I always recommend. My friend Ali stayed there with her family and enjoyed it!
The extent of my Valentine’s decor so far. I took out the red tassels in between I love you, and put in some blue ones we had left over from Molly’s wedding!
wearing my favorite old leather jacket I bought down in Panama. It’s 7 year old and it’s one of those pieces that gets better and softer with age. I totally recommend scooping one you love up at end of season sales. Pants are JMcLaughlin c/o, so are my shoes c/0, and tee underneath is a basic zara one. My bag is Tory Burch but sold out currently.
